Institute of Culinary Arts as perfect partner

The Aurora International Taste Challenge celebrates and honours universal food quality. This challenge was established to recognise and award food product excellence, while helping consumers purchase award-winning, professionally rated products with confidence.

The uncooked meats were prepared by representatives of the Institute of Culinary Arts (ICA – www.icachef.co.za).

ICA treated the meat products with respect and adjusted cooking times and methods to do justice to every product.

Institute of Culinary Arts is an award-winning school and internationally rated the best chef school in Africa and one of the top three in the world. The training ground is to cultivate highly skilled world-class chefs. Their comprehensive and specialised training is based on classic gastronomic principles, coupled with innovative thinking and creative flair.

A professional chef must know and understand the science behind food.  They need to develop their palate, know how to think ahead, know classical ratios by heart and strive for constant perfection. This is the reason the Aurora International Taste Challenge regarded the Institute of Culinary Arts as a perfect partner to ensure quality raw products were optimally prepared for the panellists to adjudicate.
